Emily Monaco is a culinary journalist and food tour guide based in Paris since 2007. Whether she's leading small groups of passionate foodies through a discovery of Paris' best croissants and cheeses or reporting for the BBC, the Infatuation, or Saveur, her passion for storytelling focuses mainly on gastronomy, with a special emphasis on cheese.
Emily holds a Master's degree in 19th century French Literature from the Sorbonne. In her spare time, she travels around the world to serve on the juries of international cheese competitions.
A native New Yorker, Emily has yet to find a Parisian bagel that meets her high standards. She is currently writing a novel about (what else?) French cheese.
Charlotte Bailey's passion for baking began as a child in small-town Wales, where her parents ran the village shop. Alongside her mother, Charlotte learned to make all manner of traditional British bakes, knowledge she deepened in 2024 with her pursuit of a French Pastry diploma from the illustrious Ferrandi.
